Today is my husband David's birthday! We're going to drive out to a Hill Country winery to have a big Italian lunch, then everyone is coming over tonight for Toll House Pie, vanilla bean ice cream and Starbucks coffee. David never wants cake. He prefers pie, so that's what I'm making. :) (recipe below)
I try really hard to completely separate his birthday from Christmas so he can have his own little celebration. I imagine he had lots of "combined" presents thru the years. So today is HIS day. :)
Toll House Pie
½ Cup butter (melted)
2 eggs
½ Cup flour
½ Cup sugar
½ Cup brown sugar
1 Cup chocolate chips
1 regular pie crust
Preheat oven to 325°. Melt butter then set aside. Beat two eggs in a mixing bowl until foamy(I beat with a whisk just well enough to see a few bubbles). Mix in sugars and flour. Slowly stir in butter and then chocolate chips. Pour mixture into unbaked pie shell. Bake for about 1 hour. This pie freezes beautifully. Serve warm with ice cream.

Okay, it's really obvious to me now. You are the bestest cook and your cover is your scrapbooking and crafting abilities. Am I right? O man, your hubby is lucky lucky...that pie looks fabulous!!! My hubby's birthday is Dec. 10th...I feel the same way...I try and make it a special day...especially after he told me that growing up on his birthday, his parents just said, "Ok Andy...go pick out a present from undere the tree and open it." How heartless that seems to me! He sort of laughs about it but I really think it hurt him then and even more now, reflecting back on it.
We always do a birthday cake for Jesus every year, and this year I am going to make a Toll House pie instead! I had that planned even before I read your blog! I think He would be very pleased! Have a very Merry Christmas!
