9.11.07

Good morning :)

We have company coming this week, so I'm busy today making food to put in the freezer. I don't like to be tied to the kitchen when people are here, so having food made ahead of time is very helpful. By tonight I'll have the following in the freezer:

Lasagna (will make a salad and garlic bread)

Beef Stroganoff (just have to add the sour cream as I froze at that point in the recipe; will serve with a salad)
* my changes - I used thin sliced round steak, fresh mushrooms, and white onions.

Cheese Enchiladas (will make rice and beans)
*my changes - I'm leaving out the chicken and replacing with more cheese and some onions lightly browned in garlic. I also cut the cumin in 1/2..not my favorite flavor. Using red enchilada sauce, but you can use red or green.

Green Chile Chicken Enchiladas (will make corn and chips/salsa)

Pecan-crusted Chicken breasts (will make roasted potatoes and a couple of veggies)

Banana Banana Bread

The recipes that aren't linked I'll have to post later. I need to cook. :)

TEN more days until my weekend scrapbooking retreat. Can't wait! Almost have my class kits put together, too. I'm so looking forward to that class. I'll have some extra class kits to sell on Etsy when the retreat is over, so I'll post when those are up.

Great recipes! I wish I were a good cook. And the office is our favorite show! We've watched them all from either the movie rental store or iTunes!

jen-my MIL has this awesome rice casserole dish that goes great with tacos, enchiladas, etc.

one cup of rice
one can of green chili
one small container of sour cream
(think that it is the 1/2 cup?)
one cup of cheese

make the rice, then add in the sour cream, and green chilis, mix well.
cook in a oven at 350 for 30 minutes.
the last 5 mins add on the cheese, this will just melt the cheese a little bit.

turns out delish!
