Shopping, Strep, and Song



Just a little *side* errand to the scrapbook store today. :) But I AM going to be using these things...not just stashing. I'm starting the long process of planning my Disney album layouts. And yeah, I'm gonna use these things in my Disney album. It's not going to be all Disney papers and embellishments. I'm going for fun, color, funky and different. I hope it turns out that way! :)

My poor baby, Noah. He woke up with a sore throat. Just didn't seem himself. I love that God gave Mommies their instincts. Instincts to know when something is wrong. So I called Noah's pediatrician, talked to a nurse, and made an appointment to take him in for a checkup. After a throat swab (that made his throat bleed it was so sore!) it turns out he has strep throat. AGAIN. This is his 3rd time this summer. Good grief! The problem seems to be that since finding out he's allergic to penicillin it's harder to get rid of with other medications. So another 5 days of Zithromax and we shall see. Thank you, Lord, for allowing this to happen NOW and not in two weeks, when Noah starts kindergarten.

This just rocks. Wendi changed the name of our Design Team to MUSES. I love that! The definition of muse is a source of inspiration; a guiding genius. Ha...I don't know about genius, but I think it's a pretty cool title! :) Our August Limelight should be up anyday along with a couple of layouts by our guest designer for August, Donna Downey. WOW! I told Donna I was totally intimidated to be on the same page with her. ;) Her response? "Are you kidding? You rock!" (snort) Wow, that was nice!

I just downloaded the new Nickel Creek CD on Itunes and am listening to it now. Oh man, it's incredible! You need it. :) The video to the right is from this new CD. Do they rule or what?

One of David's favorite things to make is homemade pizza. And this is one of our keeper recipes!

BBQ Chicken Pizza

1 recipe for pizza dough (your favorite)
10 oz. Boneless, skinless, chicken breast meat
1 T. olive oil

1 T. garlic, minced
2 T. really good BBQ sauce
½ c. really good BBQ sauce
2 c. mozzarella or gouda cheese
¼ small red onion, sliced into thin rings
2 T. fresh cilantro


In a large frying pan, heat the olive oil on medium high heat; add garlic and red onion. Saute until soft and translucent; add the chicken pieces and saute' until chicken is well-browned. Coat chicken mixture with 2 tablespoons barbecue sauce. Set aside in the refrigerator. Roll out the pizza dough to one large or two small pizzas, depending on the recipe you used. For each pizza, spread 1/4 cup barbecue sauce over the surface of the dough. Distribute 1/2 of the cheese over the sauce. Distribute 1/2 of the chicken mixture over the cheese. Place the pizza in the oven (on top of pizza stones, if you have them). Bake until crust is crispy and cheese is bubbling (8-10 minutes). Remove pizzas from the oven and sprinkle each with 1/2 of the cilantro. Serve hot!

What is your idea of a "good" BBQ sauce?

I don't know how to email you, so I'll leave the answer here :)

A "good" BBQ sauce is one that is really thick and has LOTS of flavor. If you look in the BBQ sauce section at your grocery store, these are usually the ones that aren't Kraft, Del Monte, or those brands. I'd look for one that is maybe from a local BBQ place or a specialty brand. I think the Kraft, Del Monte, and generic brands just taste like ketchup..blah. :)
