It's Friday!

Dinner is planned (below), laundry is done, Noah is playing with his cousin again, so I'm gonna scrapbook! There was a challenge posted on 2Peas to scraplift one of my FAVORITE Peas/Garden Girls, Elsiecake. WOW, she is so inspiring and talented! So, I'm gonna do that today! I can't wait! I'll post it here later when I'm done. I wanna scrap like her...carefree, fun, and full of personality!

Enjoy my video :) Anyone who knows me well knows that I like Donny Osmond a lot. Just ask my sweet husband, lol. I actually cried when I was 9 and Donny got married. Yeah, that's weird, huh?

Nothing much to blog today....so I'll just post the recipe. :) This is what we're having for dinner tonight with salad. I found this on Allrecipes.com recently and we loved it. I have a few of my own modifications added in from the original recipe.


Chicken Spaghetti Casserole

3 cups chicken breast, diced
8 ounces spaghetti, broken into pieces
4-6 oz. fresh mushrooms, sliced
1/4 cup chopped green bell pepper
1/2 cup chopped onion
1/2 tsp. chopped garlic
1 (10.75 ounce) can condensed cream of mushroom soup
1/4 cup white wine (use good wine and drink the rest with dinner)
2 cups shredded Cheddar cheese
salt and pepper to taste

  1. Put uncooked spaghetti in a large pot of salted boiling water. Let simmer, stirring occasionally, for 8 to 10 minutes or until pasta is al dente. Drain.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. In a saute' pan, cook the onions, garlic and chicken in a little olive oil until chicken is well-browned.
  4. In a large bowl combine the chicken, cooked spaghetti, mushrooms, bell pepper, onion, soup, wine and 1/4 cup of the cheese. Season with salt and pepper to taste and mix all together. Spread mixture into a greased 9x13 inch baking dish and bake in the preheated oven for 30 minutes. Sprinkle remaining cheese on top and bake for another 15 minutes. Serves 6-8 people.

This recipe is pretty fantastic too. You can't even tell it has that prefab soup in it. Nothing beats fresh green peppers. Thank you baby!
