Happy Memorial Day. :)
This photo was taken a few months ago when we went to the cemetery to see my Dad's grave. He served our country in the U.S. Navy. Be sure to thank a soldier, a soldier's wife and family, or a veteran today for their sacrifice for our freedom.
Having a low key day today. My mom is coming over and we're having grilled burgers, watermelon, and banana pudding. This is the BEST banana pudding recipe ever and it's a perfect hot weather treat. I tweaked the original recipe enough to call this one my own. :)
Jennifer's Banana Pudding
8 oz. cream cheese, softened
1 pint whipping cream, whipped (no Cool Whip allowed!)
1 (14 oz.) can sweetened condensed milk
1 large box instant vanilla pudding
3 C. milk
1/2 tsp. good vanilla extract
1 (12 oz.) box vanilla wafers
4 bananas, sliced
fresh lemon juice
cinnamon
Whip the whipping cream with an electric mixer until soft peaks form. In a bowl, combine softened cream cheese, whipped cream, and condensed milk with a strong whisk, making sure to break up the cream cheese lumps. In a separate bowl, mix pudding, vanilla extract, and milk. Fold 2 mixtures together. Slice bananas and toss in fresh lemon juice in a small bowl. (This keeps them from turning brown quickly) In a large trifle dish or bowl, repeat these layers - vanilla wafers, bananas, slight dusting of cinnamon, pudding mixture - until you reach the top of the bowl. End with a layer of pudding. Crush vanilla wafers on top and sprinkle with a small amount of cinnamon. Keep refrigerated until serving.

I am off to the grocery store to get the ingredients!!!!! Banana pudding is one of my favorites. I love the picture of the boys at the grave, I remember seeing it a few months ago. My dad also served our country in WW II in the army. He is buried a couple of hourse away from me and I probably won't get there today. But I also have two brothers who served in the army as well, I will be seeing them today. Have a great holiday,

fyi - Memorial Day is for those men and women that died in combat. Yesterday was for remembering those that give the ultimate sacrifice for our country.

Veteran's Day is for those that served but were able to return to their families.

that is a beautiful picture and such a lovely way to honor your Dad.

Now, about that Banana Pudding. I will have to give it a try, but please, if you know what is good for you, try Paula Dean's recipe for Not Yo Mama's Banana Pudding. OH MY Heavens! It is fabulous. Simply fabulous. AND I add a layer of Nutella to the bottom layer of cookies = extra fabulosity!
