2.1.08

I know I'm posting this early, but I won't be around too much this weekend. Monday is my birthday and I want to do a vintage GIVEAWAY! It will be full of vintage ribbon, flowers, book pages, and lots of little goodies.

Just leave a comment on this post anytime before Monday afternoon and tell me what your favorite cookie is! (don't forget to leave your email) I'll pick a random post number and post the winner sometime on Monday. I had planned to be hanging around the house watching scrapbooking on QVC and packing class kits, but David informed me that I'll be having a spa day on Monday. Ahhh...I can't wait. :) I'll post the winner when I get home.

I made these cookies tonight and they are so, so good. I kinda modified the original recipe, so I'll just post how I made them here:

Chocolate Mint Chip Cookies

2 1/4 cup unsifted flour
1 tsp baking soda
1/2 tsp salt
1 stick margarine
1 stick butter, room temperature
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
2 tsp vanilla
1 cup good chocolate chips (I used Ghirardelli semi-sweet)
2 cups Andes chocolate mint baking chips

Preheat oven to 375. Stir (with a whisk) flour with baking soda and salt; set aside. In large mixer bowl, cream butter with sugar, brown sugar until creamy. Add eggs (one at a time) and vanilla. Gradually blend dry mixture into creamed mixture. Stir in chocolate and mint chips. Drop by tablespoon onto ungreased cookie sheets. Bake at 375 for 12 minutes or until golden brown. Let rest on cookie sheet for 5 minutes before moving cookies to a cooling rack. Makes about 3 dozen good sized cookies.

Have a relaxing weekend!

Happy Birthday!!! Sounds like it will be an awesome, long weekend for you. Enjoy it.

My favorite cookie is basic chocolate chip cookies. Since my son is allergic to eggs we only have egg free cookies at home... but my friends hook me up with some. :)

Happy Birthday!

Happy Birthday to you!!!!
I hope someone bakes you a great big chocolate cake!!
My birthday gift to you is a special cookie recipe that my grandmother gave to me. She would make these cookies every year at Christmas until her arthritis made it too difficult for her to roll out the dough. She got the cookies paper thin!! I don't know how she did it, but I'll be making these every Christmas for as long as I can in honor of her.

Sand Tarts

1 pound sugar
½ pound butter (2 sticks)
3 eggs
½ teaspoon baking powder
½ teaspoon vanilla

Mix ingredients together. Add sifted flour until something like pie dough (approximately 4 cups).
Chill dough overnight.
Roll dough until paper thin, cut into desired shapes. Decorate with colored sugar. Bake at 350 until done.

Have a great birthday and a blessed week-end!

Jennifer, your giveaways are always so much fun. My favorite cookie would be a sugar cookie with chocolate chips stirred in - my grandmother's recipe and my sisters and I have been making them since I was about 9 years old. They are a lighter cookie than the traditional moist Toll House cookie. Have a wonderful birthday and a great spa day!

choc chip with lots of "healthy" goodies like 1/4 c oat bran, 1/4 c wheat germ, a T of flax seed, and whatever else is lurking in my pantry. just use this on your typical choc chip recipe and you won't even notice the difference, but your body will!
does this make it okay to have 2?

happy, happy birthday!

I hope that you have a very happy birthday! Isn't it amazing how many people will comment on your blog when there is a giveaway? LOL! It happens to all of us. I hope you have an incredible day at the spa. Oh, and my favorite cookie... well, I've always called them Pecan Butter Balls because that's what my mom called them. I just found out over the Christmas holiday that they are actually called Mexican Wedding Cakes. Mmmm... how can you go wrong with pecans, butter and powdered sugar???

Kelly said...

My fave would have to be a homemade chocolate chip cookie... about two minutes out of the oven... the one that starts to sink through the cooling rack and I sneak it in with a cold glass of milk before anyone notices. I mean, *I* don't sneak it, *someone* could... ;-D

Happy Birthday! My fav cookie is a tweaked version of Nestle toll house chocolate chip cookies. I LOVE these cookies, warm and fresh from the oven.

Happy Birthday!! :)

My favorite cookie is a modified chocolate chip cookie that has ground up rice krispies added to the flour, and broken up Nestle's crunch bars as the chips. Yum-o!!!

I would like to state for the record, having eaten over a dozen of the cookies from this batch, that they ROCK.
