We are finally thawing out!

Wow...after 4 days of ice, snow, sleet, and below freezing temperatures, it's finally all melting. It sounds like it is raining outside as all of the cold water drips from the house and plants.

We haven't had school all week and Noah gets back to a regular schedule today. (2 hours delayed) I've never been so excited to drive and run errands! :D

David and I actually straightened the garage last night and then I cleaned out the guest room closet to make me a "teaching" closet. All of my class kits and supplies will go in there. And since a lot of my supplies are big because they are home decor items, the closet set-up will work perfectly.

I think I'll make some comfort food tonight that ISN'T soup. We are souped-out. :)

Chicken Spaghetti Casserole
1 lb. chicken breast meat
8 ounces spaghetti, broken into pieces
1 chopped shallot
1/4 cup chopped green bell pepper
1/2 cup chopped onion
1 clove chopped garlic
1 (10.75 ounce) can condensed cream of mushroom soup
1/4 cup white wine
2 cups shredded Cheddar cheese
salt and pepper to taste


DIRECTIONS
Put uncooked spaghetti in a large pot of salted boiling water. Let simmer, stirring occasionally, for 8 to 10 minutes or until pasta is al dente. Drain.
Preheat oven to 350 degrees F (175 degrees C).

In a large saute' pan, cook the onion, shallot, garlic, and pepper in a little bit of butter or oil until soft and shallots start to brown. Remove most of the veggie mixture from the pan, setting aside in a bowl. (leave some small bits) Add a little more oil or butter and saute' the chicken breasts until well-browned on each side. Shred or cube the chicken on a cutting board.
In a large bowl combine the chicken, cooked spaghetti, onion mixture, soup, wine and 1/2 cup of the cheese. Season with salt and pepper to taste and mix all together. Spread mixture into a greased 9x13 inch baking dish and bake in the preheated oven for 30 minutes. Sprinkle remaining cup of cheese on top and bake for another 15 minutes.

Yum! Yum! Your spaghetti casserole sound good. I think I will make my version tonight. Mine is basically like yours except I add curry powder.

Glad to hear your thawing.. at least you have power. I keep seeing on the news all the people without power. I feel so sorry for them!
Oh, and the recipe sounds great!

Good grief. . . you guys had it worse than we did. We had MLK off, then Wednesday, we had a thin sheet of ice, so they canceled school (@@. . was hoping for a 2 hour delay, but no such luck). There was threat of it starting back last night, but it's just not cold enough (thank goodness!)
