Blessings and Blueberries


I love Sundays. Why is it that you automatically feel sleepy on Sunday afternoon? It's sort of like Thanksgiving dinner. You KNOW you will be sleepy afterwards, even if you had 12 hours of sleep the night before. After church this morning we went to lunch at Carrabba's. YUM. A quick run to Starbucks for coffee and a newspaper, we got home and I immediately thought "nap." I went up to my room, slinked under the covers and thought "I can close my eyes for a few minutes." Alas, Noah found me and wanted a playmate, so I had to leave my new soft sheets to play Star Wars legos. Oh well...the sheets will be there tonight and I did get to snooze for 10 whole minutes!

I got an itch to bake something this afternoon, so I pulled some fresh blueberries out of the fridge and made this yummy homemade blueberry pie with homemade crust. (I'll share the recipe below) Hey, it's not gorgeous but it's good! It was super easy...a good thing since I'm still not feeling 100%. I'm trying to resume normal activities, but this asthma is kicking me in the tail. I know that God is using it to slow me down... It's just sometimes hard to accept! But the pie was good and made by ME. :)

Our lesson in class today at church was wonderful. It was all about setting a solid foundation for your life so when the winds blow and the storms come you don't falter! My relationship with Christ is that foundation. Knowing that He is always there, that He will never sway is incredible. So many people like to sit around and complain about what God has NOT done for them or how God must be mad at them. God wants us to ASK him for blessings. Have you communicated with God lately? Really fallen on your knees to come to Him for your needs? If we're not asking then why do we feel so deserving? This really spoke to me. I am totally guilty of doing this same thing. "God, why aren't you doing THIS for me?" "God, when are you going to finish this project in my life?" Well, if I examine myself I can most of the time find that I haven't been honestly asking for those things. I've been sitting back with my arms folded saying, "ok, God...when are you going to act?" God likes specifics. He takes requests from His children. I know that God hears me and wants to bring favor and joy to me when I earnestly seek to follow His will in my life. What an incredible thing!

Have I mentioned how BLESSED I am to be on the Design Team for Wendi Speciale Designs? Wendi is the biggest sweetheart and is SO stinking talented in what she does. Her stamp designs are just incredible! You must check them out. :)

I just put Noah to bed. Read him a story, said his prayer, kissed him goodnight. Almost asleep, he turned over and said, "here" with his finger stuck out and his eyes closed. He was handing me the last picked booger out of his nose for the night. Great :)

Alrighty, here is the recipe for the Blueberry Pie that I made today. It is modified from one I found on Allrecipes.com.

Homemade Blueberry Pie

3/4 cup white sugar
5 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
4 cups fresh blueberries
1 recipe pastry for a 9 inch double crust pie
1 tablespoon butter

1 Tbsp. lemon juice

* Preheat oven to 375 degrees. Toss blueberries with the lemon juice.
Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries.
Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into 1/2 - 3/4 inch wide strips, and make lattice top. Crimp and flute edges.
Bake pie on lower shelf of oven for about 70 minutes, or until crust is golden brown.

Ooh love Nickle Creek and Alison Kraus. Glass Houses was the first album I ever bought.
